Breakfast: The Most Ignored Meal of the Day
Have you ever noticed that breakfast has just been tossed aside and garnished with breakfast bars, cereals, smoothies, and sometimes just the traditional ol' cup o' joe? Well, that my friends is sad. There are so many delicious and fast breakfast options that don't come in a box or require a blender, and it was this realization that got me in the mood to make a breakfast dish I love yet have never ever made at home. What is this coveted dish you ask? Good old fashioned Country Biscuits and Gravy! I am not sure why I have never made this, likely because I thought it was some outrageously difficult process. In fact, the hubs had to convince me to even give it a shot. Now that I have made it once, I know now that this is actually one of the easiest breakfasts to whip up and worth every bite!!
I did not make the biscuits from scratch, but I didn't use pilsbury either. I used 2 3/4 cups of Bisquick mixed with Milk. Mixed that together until it formed a soft dough. Rolled that out to 1/2" thickness cut out some biscuits and baked them for about 9 minutes.
I used a delicious maple sausage from Bob Evans. I used 3/4 lb and browned it in a cast iron skillet (a must have for every kitchen). Once it was cooked through, I began adding 1 Tbls of flour at a time. It is imperative that you let the flour turn brown before adding the next tablespoon otherwise your gravy will taste just like flour. I added about 5 TBLS, but you can add as little as 4 and up to 8 depending on how thick you want it. I then added 2 cups of milk and constantly whisked it until it was a beautiful brown, thick gravy. I topped my biscuits and enjoyed! It took me back, and made me think of my Aunt Betty from Kentucky. She is an incredible cook! Her specialty is good ol' country cooking. Her Chicken and Dumplings are to die for! In fact, my soon to be famous coconut cream pie cupcakes use her cream pie filling recipe! Ok, enough about cupcakes, I do have baby weight to lose still!
